Enfin bon, ça reste un service en ligne quoi, gaffe à ce qu'on upload, et ça se fait assez facilement avec un bon coup d'éditeur en local.
Ingrédients (2 grandes pizzas)
- 500 g de farine (je prends 90% de T65 et 10% de T150)
- 260 g d’eau à 20 °C
- 100 g de levain liquide, ou 25 g de levain en poudre
- 5 g de levure de boulanger fraiche (ou 5 à 10 g de levure de boulanger déshydratée, réactivée dans un verre d’eau à 38°C)
- 10 g de sel
- 15 g de sucre en poudre (les sucres non raffinés type rapadura marchent aussi)
- 30 g d’huile d’olives
Temps
- Pétrissage : 10 à 15 minutes au robot (je le fais à la main)
- Pointage : 2 heures
- Apprêt : 1heures
- Cuisson : 15 minutes
Marche à suivre
- Dans un saladier, mettre la farine, incorporer le levain, la levure, le sel et le sucre, et la moitié de l’eau. Mélanger, ajouter le reste de l’eau, amalgamer ensemble. À ce stade-là je fais généralement reposer une dizaine de minutes, puis j’intègre l’huile et je malaxe jusqu’à ce que ça ne colle plus au saladier. Ensuite je pétris la pâte (je ne suis pas encore au point sur la technique). Au robot c’est plus simple, on y met tous les ingrédients (sauf l’huile), on fait marcher à vitesse lente sur 1/3 du temps puis vitesse rapide pour le reste, et 2 minutes avant la fin on ajoute l’huile.
- Faire une boule, laisser reposer à température ambiante 2 heures recouverte d’un linge humide. Au bout d’une heure plier la boule en deux.
- Fariner le plan de travail, diviser la pâte en deux pâtons, et les étaler au rouleau aux dimensions des plaques du four, puis les poser sur un papier de cuisson. Piquer la pâte à l’aide d’une fourchette et la laisser reposer 1h recouverte d’un linge humide.
- Mettre le four à chauffer (thermostat 8, environ 235 °C). J’utilise une pierre à pizza (de chez http://www.pierre-a-pizza.eu/), ça améliore considérablement la cuisson. La pierre est à mettre à chauffer dans le four, elle transmet sa chaleur directement à la pizza posée dessus. C’est du grand luxe.
- Étaler la base (sauce tomate, crème fraiche, etc…), puis les garnitures.
- Enfourner la pizza. Il est conseillé de baisser la température à 220 °C (thermostat 7-8) au bout de 5 minutes.

Et pendant ce temps là, les dirigeants d’Amazon se frisent doublement les moustaches. Cette situation, c’est tout bénéfice pour eux. D’abord parce que faute de pouvoir se rendre dans des commerces, des consommateurs transfèrent leurs achats vers le e-commerce et principalement Amazon qui n’avait pourtant pas besoin de cela. Selon le bon vieux principe des vases communicants, quand ça baisse d’un côté, ça monte de l’autre.
